You're lucky because Ireland is very safe and B&Bs are everywhere. I really feel like you could do anything you wanted without the constrains of a tour group.
Besides that, I'd rent a car and get out in the countryside. The real beauty of Ireland is experienced away from the city. If you're looking for anything specific, please let me know.

What would you recommend for a woman travelling alone? I would prefer to not be lumped into a common tour group or hotel accommodations.
What a country! Oh yes people are friendly over there!
Ireland has a pretty good bus system, and locals are willing to give rides. They are very friendly and helpful.
